One cup of mixed baby greens contains about eight calories.
Fresh fennel is nutrient rich and contains vitamin C and potassium.
Fennel has been used to relieve indigestion.
The skin of pears contains more phytonutrients than the flesh.
Marinated Greens Fennel and Pear Salad
Ingredients
Salad
6 cups spring mix
1 large fennel bulb, shredded; fronds chopped
6-8 green onions, chopped
1 large pear, chopped
Dressing
1/4 cup apple cider vinegar
3 tablespoons olive oil
3 tablespoons fresh lime juice
1 tablespoon agave nectar
1/4 teaspoon black pepper
1/8 teaspoon sea salt
Servings:
6-8
Directions
In large bowl, combine the salad greens, shredded/chopped fennel and green onions.
Mix dressing ingredients in a jar, cover and shake.
Pour dressing over salad medley, thoroughly incorporate and allow to marinate in refrigerator for 30 minutes.
Add chopped pear to medley.
Enjoy as a side dish.
