Chunky Watermelon Cucumber Soup

Ingredients

  • 3 cups watermelon seeded and pureed in blender
  • 3 cups watermelon seeded and chopped into small chunks
  • 1 cup cucumber peeled, seeded and chopped into small chunks
  • 1/2 cup yellow bell pepper seeded and finely chopped
  • 8 mint leaves finely chopped
  • 1/4 - 1/2 poblano pepper seeded and minced
  • 1 - 2 green onions minced
  • 1/4 teaspoon sea salt

Servings:

4-6

Directions

  1. In large mixing bowl, mix together all ingredients and stir until thoroughly combined.
  2. Refrigerate until chilled.
  3. Serve in your favorite soup bowls.
