1 cup fresh corn (or frozen, thawed)
1 cup whole grain oats, finely ground
½ cup grated carrots
½ cup quinoa flakes
¼ cup buckwheat flakes
¼ cup ground chia seeds
¼ cup ground flax seeds
3 tablespoons melted coconut oil
1 teaspoon sea salt
1 tablespoon coconut nectar or date paste
Add all ingredients except coconut oil to a food processor using “S” blade and blend until slightly chunky.
Add coconut oil and pulse until thoroughly combined.
Separate dough into 15-18 equal parts and form balls by rolling the dough in the palms of your hands (using food-handling gloves).
Evenly place the balls on baking sheets lined with parchment paper.
Bake at 350 degrees for 15 minutes, turning once to ensure even browning. Serve warm.
