Perfectly Purple Cabbage & Pear Salad
Ingredients
Salad
1 large purple cabbage quartered and thinly sliced
1 medium red onion thinly sliced
2 medium pears chopped
Dressing
1/4 cup
apple cider vinegar
1/4 cup
fresh lemon juice
1/4 cup
olive oil
1/4 cup
coconut nectar
1 teaspoon
fresh ginger
1/2 teaspoon
sea salt
1/2 teaspoon
black pepper
Servings:
8-10
Directions
Combine cabbage and onion in a mixing bowl.
Add dressing ingredients in a covered jar, vigorously shake then pour over salad.
Mix well and allow to marinate in the refrigerator for 15 minutes.
Add chopped pears and thoroughly combine with other ingredients.
Enjoy as a side to your main course, soup or sandwich.
