Mini Whole Grain Scones with Apricot Spread
Ingredients
1 cup whole grain rolled oats
1/2 cup sorghum flour
1/2 cup teff flour
1 teaspoon ground cinnamon
1 teaspoon aluminum free baking powder
1/8 teaspoon anise
1/4 teaspoon sea salt
3 tablespoons coconut nectar
1 teaspoon fresh orange zest
1/4 cup fresh orange juice
1/3 cup coconut oil

Whole Grain Scones
Combine first 7 ingredients in a mixing bowl.
Add remaining ingredients and mix well.
Scoop 1 tablespoon of dough and roll into a ball. Place on a parchment-lined cookie sheet. Repeat with remaining dough, forming 12 balls.
Press each ball with a fork to about 1/2 inch thick.
Bake at 350 degrees for 15 minutes.
Chunky Apricot Spread
Soak one cup of dried apricots in water for 30 minutes or until soft and tender. Drain off water, add to food processor with 1 tablespoon of water and pulse to desired consistency. When available, use fresh apricots and enjoy the benefits of less sugar.
Spoon 1 teaspoon of apricot spread on top of warm scones and enjoy!
