Chunky Watermelon Cucumber Soup
Ingredients
3 cups watermelon seeded and pureed in blender
3 cups watermelon seeded and chopped into small chunks
1 cup cucumber peeled, seeded and chopped into small chunks
1/2 cup yellow bell pepper seeded and finely chopped
8 mint leaves finely chopped
1/4 - 1/2 poblano pepper seeded and minced
1 - 2 green onions minced
1/4 teaspoon sea salt
Servings:
4-6
Directions
In large mixing bowl, mix together all ingredients and stir until thoroughly combined.
Refrigerate until chilled.
Serve in your favorite soup bowls.
